Pesto Dip

I like pesto and have it on hand in the fridge most of the time.  It is a go-to ingredient when I need to whip up a quick dinner … pasta with pesto sauce.  Recently at an event, I had pesto prepared as a dip and it was delicious.  The flavor of the dip was so compelling….good on raw veggies as well as on crackers.   The event was my retirement open house and a co-worker had prepared the dip.  I was not the only one who asked her for the recipe and after she shared the recipe, I cannot believe how simple and easy it is.  She wouldn’t give specific amounts and said she relied on the consistency of the dip to let her know what amounts to add of this three ingredient dip.  The dip is a mixture of pesto sauce, sour cream, and cream cheese.  That is it … and I promise you, if you like pesto, you will love this dip.    A week after getting the recipe I had occasion to have friends and family over and fixed the dip to share with them.  I got very similar reactions from our guests as I had when I first tasted this dip…WOW!   For me the big question was “where has this dip been and why am I only discovering it now”?!  I guess it proves that there are always new food discoveries to be made and that is a good thing actually.

My dip consisted of approximately the following amounts:

     8 oz. pre-made pesto

     8 oz. sour cream

     8 oz. softened cream cheese

This has already become a family favorite and something so easy to put together with ingredients you will likely have on hand.  Depending on the consistency you want or like you can vary the amounts you use in the recipe.    I am also  considering other ways to use the dip/spread such as spread on a wrap along with meats and veggies or spread on a sandwich or Panini in place of mayonnaise, or even mixed in with egg yolk for deviled eggs with a pesto twist.  The dip keeps well for several days in the refrigerator if it lasts that long!
